1 lb hamburger
1 carrot grated
2 15oz cans of chicken broth
4 cups diced potatoes (uncooked)
1 tsp basil
1 tsp parsley
3 Tbsp butter
1/4 cup flour
2 cups milk
8 oz Velvetta cheese

Directions:
Directions:
brown hamburger (you can add chopped onion if you like). Drain well and set aside.
Saute carrot in butter in a large soup pot. Add chicken broth, potatoes, hamburger meat, basil and parsley. Bring to boil and continue to boil until potatoes are tender.
In separate skillet, cook 3 Tbsp butter with 1/4 flour until light brown. Mix into soup mixture and cook until soup mixture thickens. Add milk and cheese and cook until cheese melts and soup is hot.
