Five or six large kale leaves
Low salt chicken broth, at least 2 cups
One large red onion
Three cloves garlic
Two chicken breasts , boneless , cut up
1/2 cup cooked brown and wild rice
Three stalks broccoli
Oregano,
Salt
Pepper
Basil
Sage
Thyme
Olive oil
Light sour cream

Directions:
Directions:
In large pot add two tablespoons olive oil over medium heat
Add cut up raw chicken breasts,
Add garlic cloves cut up
Add onion cut up all into bite size pieces
Stir and add more oil to cook chicken, but not burn
Add salt
Cook for ten minutes with cover on , on medium heat, stir frequently
Then add one cup low salt chicken broth
Cover back on simmer another ten minutes
Cut kale into small bite size pieces
Add to soup
Add seasonings
Add broccoli cut up
Add another cup of chicken broth
Add water for the consistency you like
Then add cooked rice
Cover and simmer for thirty minutes
Serve with small dollop of light sour cream
