2 lbs extra lean ground beef
1 t. salt
1/2 t. pepper
1 t. cinnamon or to taste
4 medium onions, chopped fine
1 stick butter, softened, or 1/2 cup clarified butter
juice of two lemons, approximately 1/4 cup
1/2 cup pine nuts, lightly browned in butter.

Cook onions until translucent. Add meat and spices and mix well. Cook until the meat is done*. Adjust seasoning. Add butter and cook only until melted and mixed in. Off heat, add lemon juice and pine nuts.

* Before you add the butter, drain off any animal fat that has rendered from the beef. Cooking time depends on the intended use. If it is to be added to something that will require further cooking, cook only until barely done. If it is to be eaten directly, e. g., served on scrambled eggs or over hummus, it should be cooked until it gets a little crispy.
