6-8 chicken breast halves
1/4 cup flour
1/4 tsp. salt
dash of pepper
oil
1 (10 oz.) jar peach preserves
1/2 cup barbeque sauce
1/2 cup chopped onion
2 T soy sauce
1 (6 oz.) can water chestnuts, drained and sliced
1 medium bell pepper, cut into strips
Hot cooked white rice

Directions:
Directions:
Coat chicken with seasoned flour; brown in small amount of oil. Drain. Combine preserves, barbeque sauce, onion and soy sauce; pour over chicken. Cover; simmer 40 minutes or until chicken is tender. Add bell pepper and water chestnuts during last 15 minutes. serve over cooked white rice.
