1 box Mini Penne or Penne Pasta (I use mini penne)
1 small carrot, skinned and shredded(I use veggie peeler and cut off small shreds)
2 tomatoes, diced
1 large or 2 small pickling cucumbers, diced
1/2 Vidalia or yellow onion, chopped
1 measuring Tablespoon Red Wine Vinegar
1/4 green pepper, diced
2 packs dry Ranch Dressing Mix
2 to 3 heaping cutlery Tablespoons Mayonnaise

Directions:
Directions:
In a small bowl place prepare and place vegetables while pasta cooks. Drain pasta. Rinse pasta with cold water to cool down. Place in large bowl.
Dump bowl of vegetables on top of pasta. Sprinkle vinegar on top of vegetables. Let set for a minute the sprinkle dry dressing mix over top.
Add mayo and mix until well coated. Need enough mayonnaise to make creamy. Refrigerate at least an hour before serving.
