1 pound elbow macaroni
1 medium-large red onion, diced
2-3 cloves garlic, minced
1 1/2 cups mayo/sour cream (mixed and equal to 1 1/2 cups, add more or less of either)
1 1/2 pounds cheddar cheese, grated (suggested: one block Cracker Barrel NY aged white cheddar, one extra sharp orange cheddar, and a little extra of your favorite)
2 cans cream of mushroom soup
2 jars diced pimentos (in olive aisle)
Salt and pepper to taste
Handful of Cheez-It crackers, crushed, for topping

Cook pasta al dente (maybe a minute or so less than box directions, as pasta will cook in over later on. Turn on oven and preheat to 350 degrees.

Mix mayo, sour cream and soup together. Add garlic, onion, pimento and seasonings. Mix well. Add soup mixture to drained pasta, mix well. Add cheese, mix well.

Place pasta in casserole dish and top with Cheez-Its.

Bake at 350 degrees for 30 minutes or so, until bubbly.

My friend Lily held Thanksgiving at her house every year for 10 years for all of us San Francisco orphans as we didn't have anyplace else to go. Our friend Kiva would bake up this dish and bring it, and we all absolutely loved it! I made it once, and it didn't come out quite as good, but it was my first time making it, and I'm not the best in the kitchen. It was still delicious, just not exactly the same as Kiva's. Makes for great leftovers, too.
