2 cups crushed pineapple
1-1/2 T unflavored gelatin
2 T maraschino cherry juice
12 maraschino cherries, chopped
1/2 cup sugar
1/4 cup cold water
2 (3 oz.) pkg. cream cheese
1/2 pint (1 cup) whipping cream, whipped
Directions:
Directions:
Soften gelatin with 1/4 cup water. Heat pineapple with sugar and add gelatin and cherry juice. Cool. Soften and mash cream cheese and add finely chopped cherries. Add pineapple to cream cheese, mixing a small amount in at a time. Whip until slightly thickened. Whip the cream and blend into pineapple mixture. Pour into mold and chill.
