1 cup granulated sugar
4 T cocoa (prefer special dark)
2 cups milk
3 egg yolks
5 T. flour
1/2 stick unsalted butter
1 tsp. vanilla
1 baked 9-inch pie crust

Directions:
Directions:
Mix the sugar, cocoa, and flour well in a thick pot. I use a large cast iron skillet. Add milk. Cook on medium until the mixture begins to thicken. Stir like crazy for at least 5 minutes to keep it from sticking and burning. add beaten *egg yolk and butter; cook for one minute more. Add vanilla; then pour into your baked pie crust and cool before you add meringue.
*note: add a little of the chocolate mixture to the egg yolk so that it won't cook the eggs immediately when you add it to the skillet.

Meringue:
3 egg whites,
1/4 tsp. cream of tartar,
1/2 tsp. vanilla,
6 T sugar.
Beat the egg whites, cream of tartar, and vanilla until soft peaks form. Slowly add 1 tablespoon of sugar at a time. Beat until hard peaks form and sugar is dissolved. Spread on top of your pie all the way to the edge of your crust to keep the meringue from shrinking. Bake in 350º oven for 10-12 minutes or until desired browning has occurred. Cool before you refrigerate or your meringue will weep and shrink.
