1/4 c squeezed lemon juice
Salt
8 slices unsmoked ham such as prosciutto (about 8 oz.) cut into thin strips
1/2 c oil-cured black olives, pitted
2 tsp. fresh thyme
grated zest of 2 lemons
freshly ground black pepper
1 lb. thin pasta, such as angel hair

Directions:

1. Pour lemon juice into small bowl. Season lightly with salt. Add oil and stir gently with fork to blend. Set aside.
2. In large shallow serving bowl, combine ham, olives, thyme and lemon zest. Season with salt and pepper (as preferred), and toss to blend.
3. Cook and drain pasta as usual.
4. Add pasta to serving bowl, pour on dressing and toss gently.
5. Serve with grated Parmesan if desired.

For 2 people I make 6-8 oz. of pasta, but 3/4 of the other ingredients. I sometimes substitute Bresaola for prosciutto, and prefer to sprinkle the slices over the top of the tossed pasta, so the ham doesn't cook in the hot pasta. Wonderful summer recipe esp. with cold white wine.
