Corned Beef and Cabbage Recipe

3 lb. corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3" pieces
1 large head cabbage, cut into small wedges
1 beer

Directions:
Directions:
Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet and a can of beer. Cover and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender. Add whole potatoes and carrots and cook until the vegs are almost tender. Add cabbage wedges,cover and cook 15 minutes more . Test the doneness of the vegs with a fork.
Remove meat and let it rest 15 minutes. Place vegetables in a large bowl. Slice meat across the grain. Serve with brown mustard and lots of butter for the cabbage and potatoes. Irish soda bread is also a great accompaniment.
