1-2 lemons
2 lbs. ripe tomatoes
1 1/2 lbs. sugar
2 t. cinnamon
2 T. butter

Cut lemons into quarters and remove all visible seeds. Coarsely grind in a food processor.

Remove stems and peel the tomatoes. There are different methods for this. Use your favorite or find one you like on the Internet. One method: Insert a fork in the stem end and hold the tomato one inch above a medium high gas flame for 15 - 30 seconds, rotating the fruit all the while. The skin will split. Let cool, peel, cut into eighths and place in a 4-quart saucepan. Add lemon and cinnamon and bring the mixture to a boil. Add sugar and stir until dissolved. Continue cooking until mixture sheets from the spoon or a candy thermometer reaches 219ºF
Ladle into sterilized jars and process in a hot water bath for 20 minutes.
Makes 5 1/2 pints

Variation: Ginger can be used instead of cinnamon
