BASIC ROLLS:

2 packages yeast
1/4 cup water
1 3/4 cups milk
1/4 cup shortening
1/4 cup sugar
1 tbsp. salt
5-6 cups flour, sifted

CINNAMON ROLLS:

1/4 cup melted butter or margarine
1/2 cup sugar
1 tbsp. cinnamon

BASIC ROLLS:

Sprinkle or crumble yeast in lukewarm water (if compressed yeast) or warm water (if dry yeast). Scald in sauce pan milk, shortening, sugar and salt. Cool to lukewarm and add softened yeast. Add flour by mixing thoroughly to make soft dough. Knead until smooth on floured board. Place dough in greased bowl, cover and let rise in warm place until double in size. Punch down and shape into rolls, by making a jelly roll and cutting it into 1-inch slices. Bake at 375º for 20 minutes.

CINNAMON ROLLS:

Follow directions above up to and including mixing in the flour. Then roll dough into a rectangular sheet 1/2 inch thick; spread with butter, sugar and cinnamon. Cut into rolls as above and place in greased 12x8x2 pan; let rise in warm place until double in size. Bake at 375º for 20 minutes.
