1 cup shortening
2 cups brown sugar
2 eggs
1/2 cup cold coffee
3 1/2 cups flour
1 tsp. soda
1 tsp. salt
1tsp. nutmeg
1 tsp. cinnamon
1 cup raisins (I like to use golden)
1 cup chopped nuts

Directions:

Mix wet ingredients then add dry, adding raisins and nuts last. Drop rounded teaspoonfuls onto lightly greased cookie sheet. Bake at 400º for 8 to 10 minutes.

I used to hate these as a kid but now they just taste like Christmas to me. I make them every year because they were my mom's favorite. The recipe card is written in mom's hand, she passed away in 2003 at the age of 81. I chuckled when I noticed she spelled cinnamon as cincinnamon...a mistake I keep making myself as I write this cookbook. I know why too, we are unconsciously spelling Cincinnati as we begin to write the cin part. :)
