2 sticks butter
1 1/4 cup flour
5 cup milk
2 1/2 cup sour cream
2-5 oz containers Bel Gioioso grated parmesan cheese
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon finely chopped garlic
1 1/2 teaspoon old bay w/ garlic & herb

About stick butter
4 small onions chopped fine

80 ounces (8 boxes) frozen spinach
Drained and chopped

Directions:
I start by putting about a stick of butter in fry pan. Once butter melts, put chopped onions in on a low heat to sauté onions while getting started on white sauce for spinach. In bigger pan melt the 2 sticks of butter. While butter is melted I put all spinach that I have had out for about hour broken up into large microwave pan. Heat for 5 minutes - stir, heat for 5 minutes - stir etc. In middle of cooking spinach the butter will be completely melted, once butter is melted add flour a little at a time stirring constantly with whisk. Once all flour added you’ll have like a paste, started adding milk a cup at a time. One it starts getting thick add next cup. Once all milk is added then add the cheese & stir until melted. Add sauté onions & all the seasonings. The spinach should be cooked by now and in strainer. Make sure all water is out of spinach. Add spinach to cream mixture & completely mix, add sour cream & mix. Serve & enjoy!!!

I love spinach but my husband really loves it and could eat at every meal. So this is a huge batch of which I then put in smaller containers & freeze. It taste a lot like the Boston Market Creamed Spinach. It freezes great, if a bit thick just add a little cream to loosen up. It goes great with dinner, but we love to eat it with blue chips or Doritos. On the East coast many eat greens with breakfast so we eat this instead!!Anyway enjoy!!!
