4 to 6 lb. corned beef brisket
2 T. pickling spice
1 orange, sliced
1 onion, sliced
1 stalk celery with leaves, sliced
1 carrot, sliced
1/3 c. packed brown sugar
1 T. yellow mustard

Directions:
Directions:
Place large sheet of foil on a shallow pan. Rinse brisket and pat dry. Place brisket in center of the foil and pour 1/4 c. fresh water over the top. Sprinkle with the spice and arrange the orange slices and vegetables over and around the meat.

Bring long ends of the foil up over the meat and seal with a light double fold. Seal other ends, turning them up so liquid cannot run out.

Bake in oven at 300 for 4 hours. Cool slightly, unwrap and put in shallow pan. Spread with brown sugar mixed with mustard. Bake at 350 for 20 minutes or until glazed.

This is a great substitute for a boiled corned beef brisket. Being that corned beef is quite fatty, I love this recipe because the fat cooks off the brisket - almost completely.
