1 lb ground beef
1 med. onion, chopped
1 clove garlic, minced (optional, I use the kind already in the jar, about a half tsp. because we are not too much into garlic)
1 T. whole sweet basil
1 1/2 tsp salt
1 16 oz. can Italian tomatoes
2 6 oz. cans tomato paste
2 eggs
3 c. cottage cheese (a large container)
1/2 to 3/4 c. Parmesan cheese grated
1 tsp salt
1/2 tsp. ground black pepper
18 oz bag mozzarella cheese
18 oz cheddar cheese
1 10 oz box of lasagna noodles

Directions:
Brown meat and onions, add next 5 ingredients and 1 c. water,
simmer covered for 15 mins, stirring often. Cook noodles in
boiling salted water until tender. I put just a little bit of oil in the
water so the noodles won't stick together. Drain and set aside. Beat
eggs, cottage cheese, Parmesan cheese, salt and pepper.
In a 9x13 pan layer noodles, meat mixture and cottage cheese
mixtures. Between layers on top of cottage cheese sprinkle the
mozzarella and cheddar. Do this for however many layers. In a
9x13 usually 3 or 4 layers.

Bake at 350º for about 30 minutes or so until cheese is nice and
bubbly on top. I usually save a little of the shredded cheese to
sprinkle on the very top.

If you need to you can make ahead of time and refrigerate. If so,
bake at 375º for 40 to 45 minutes. Let stand for 10 minutes before
serving.
