1 box pasta (wagon wheels; shells or macaroni work good with this but my daughter insists that the wagon wheels hold more cheese)
1 lb. cream style cottage cheese
1 lb. sour cream
2 eggs, slightly beaten
1 1/2 tsp. salt
1/8 tsp. pepper
4 tsp. minced onion (dehydrated) or 1/3 c. fresh diced (or 1 medium diced and sautéed and cooled down)
1 pkg (2 cups) shredded medium cheddar cheese
1 pkg (2 cups) shredded sharp cheddar cheese

Cook macaroni according to label directions, drain.

Combine cottage cheese, sour cream and most of both cheese pkgs
(save a little of each for top) until lightly blended. Add eggs (with salt, pepper and onion) to the above, then start adding the pasta, fold gently. Spoon into baking dish, top with remaining cheeses, and bake uncovered at 350º for 45 minutes or until bubbly. It will require a very large baking dish or several ones.

Freezing instructions: Please bake for at least 20 minutes, then cool down any dish you wish to freeze. Seal tightly and freeze. For lunches, place scoopfuls into a greased muffin pan, bake for 20 minutes, cool down and freeze individually. Great for the lunch box.

Optional: Add crumbled crisp cooked bacon as a layer into the casserole and sprinkle some on top too!
