3 eggs, well beaten
3/4 c. Crisco oil
2 c. white sugar
3 tsp. vanilla
2 c. pastry flour
1/2 tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. salt

Directions:
Directions:
Mix eggs, Crisco oil, sugar and vanilla together. In a separate dish, mix pastry flour, baking powder, baking soda, cinnamon and salt.
Peel and grate 2 c. zucchini, pour off excess water. Add flour mixture to first mixture. Add zucchini, 1 cup of nuts (pecans or walnuts), 1 c. mixed candied fruite or raisins. Mix all and bake in loaf pans at 300º for 60 minutes or until done.
