To make approx. 48 using a ravioli form
2 large eggs
1/2 Tbs. milk
+or - 1 1/2 cups flour (preferably White Lily)

Mixer Directions: Beat eggs and milk with paddle beater until just blended. Slowly add flour and mix til blended. Switch to dough hook. Knead for 3-5 minutes adding more flour if dough is too sticky. turn out onto floured surface and knead by hand until smooth and pliable. Continue at *
Hand Method: Mound up four on work surface . Make deep well in center . Beat eggs and milk and add to well. Using a fork, beat eggs and gradually incorporate as much flour as needed. Knead by hand until smooth and pliable.
* Wrap in plastic and let rest for 30 mins or refrigerate for longer time. Let come to room temp before rolling out Use 3-4 oz. of dough for 1 batch of ravioli using a form.

Nothing says 'family' better than ravioli. It makes me remember so many wonderful meals with my funny and loving Italian in-laws. I now have and cherish my mother-in-law's ravioli pot and her big wooden stirring stick.
