2 1/4 cup flour
2 tbsp sugar
3 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1 1/2 - 2 cups milk
3/4 cup mashed pumpkin
1/4 cup olive oil
3 eggs
1/2 cup chopped nuts (opt)

Syrup:
1/2 cup sugar
1 tbsp cornstarch
1 tsp cinnamon
1 cup apple cider
1 tbsp lemon juice
2 tbsp butter (opt)

Directions:
Directions:
Preheat the waffle maker.

Stir together the flour, sugar, baking powder, salt, 1/4 tsp cinnamon, ginger, nutmeg. Add the pumpkin, oil, eggs. Starting with 1 cup of milk beat the ingredients together. Add more milk to get to a waffle batter texture. The dough should be wet and thicker than pancake batter. You may use up to 2 cups milk. Stir in the nuts, optional.

Syrup: In a saucepan combine 1/2 cup sugar, cornstarch, 1 tsp cinnamon. Stir in the cider. Cook on medium heat until a boil and the syrup thickens. Add the butter and remove from the heat.

Cook waffles on waffle maker until golden brown and drizzle with apple cider syrup. Delicious!

This recipe is worth the assembling! Homemade pumpkin waffles and homemade apple cider syrup?! Oh, yes give it a try. This recipe came from one of my friend's mom. She is an amazing baker and this recipe is just as amazing! I've made this recipe numerous times and it always delivers rave reviews.
I would imagine you could make these as pancakes but adding the entire portion of milk, but I've never done it that way.
