3 tbsp olive oil
2 tbsp honey

1 cup oats
1/2 cup nuts
1/2 coconut
3/4 tsp cinnamon
1/2 tsp vanilla

Directions:
Directions:
Heat the oven to 350º

Warm the olive oil and honey slightly in the microwave (30 seconds)

Mix oats, nuts, coconut, cinnamon and vanilla. Add the olive oil / honey and mix everything together.

Spread thinly on a cookie sheet.

Bake 8-10 minutes until golden brown

The original recipe came from a local farmers market (Lake Oswego) that mom and I love to go to. Of course I always have to improvise a recipe and add my own flair! Why spend ten bucks on this granola when you can make it yourself and have it fresh and warm. I'm a cinnamon lover, if you are not you can tone down the cinnamon. I love to put pecans in this recipe but almond silvers are just as wonderful. This is such a wonderful thing to have on hand for snacking, on top of yogurt or as your morning cereal.
