1 lb. boneless skinless chicken breast
1 egg
1 cup spaghetti sauce (see my recipe)
3/4 c. Italian bread crumbs
1/4 c. garlic olive oil
1/4 lb. provolone cheese
1/2 c. mozzarella shredded cheese
1/2 c. asiago shredded cheese

Heat oil in a skillet pan. Flatten chicken between wax paper to 1/4" thickness, beat egg with 1 T water in a small bowl. Put breadcrumbs mixed with asiago cheese on a flat piece of wax paper. Dip chicken into egg mixture on both sides and coat with breadcrumbs mixture. Add chicken to skillet and cook until golden and flip and repeat. Remove from skillet and put in oven proof dish. top with sauce and mozzarella cheese and a slice of provolone cheese. Cook at 350 until cheese melts
