Ingredients: Layers: 4 eggs 1 cup sugar 1/4 t cream of tartar waxed paper
Filling: 6 oz. semi sweet chocolate pieces 3 cups whipping cream 1/3 cup sugar 1 pint fresh strawberries , sliced

Directions:1) Merinque layers: Preheat oven to 250 degrees. Beat until stiff; 4 egg whites, a pinch of salt, and 1/4 t cream of tartar. Gradually beat in 1 cup sugar & beat until meringue is stiff and glossy. Line baking sheets with waxed paper and on paper trace 3 circles-8" in diameter each. Spread meringue evenly over circles, about 1/4 " thick & bake in slow oven for 20-25 minutes or until the meringue is pale gold but still pliable. Remove from oven and carefully peel waxed paper from bottoms. Place on rack to dry and cool.
2) Filling: Melt 6 oz. semi sweet chocolate chips and 3 T water. Whip 3 cups of cream until stiff. Gradually add 1/3 cup sugar and beat until stiff. Slice strawberries.
Presentation: Place a meringue layer on a serving plate and spread with thin coating of melted chocolate mixture. Then layer 3/4 " thick of whipped cream & top with sliced strawberries. Second layer of meringue, spread chocolate, another layer of whipped cream and then berries. Top with the third meringue layer. Frost sides and top with remaining whipped cream and berries. Drizzle remaining chocolate over top. Chill at least two hours. |
