1 cup flour
1 1/2 cups sugar (divided)
1 tsp baking powder
1/2 tsp salt
6 tbsp cold butter
1/2 cup boiling water
2 tbsp cornstarch
1/4 cup water
1 tbsp lemon juice
4 cups berries (your choice, can mix)
1 1/2 tsp cinnamon

Preheat oven to 400º

Mix flour, 1/2 cup sugar, baking powder and salt. Cut in butter until coarse crumbs. Stir in 1/4 boiling water until mixed evenly.

In a separate bowl dissolve cornstarch in cold water. Mix in 1 cup sugar, lemon juice, berries and cinnamon.

Place the berries mixture into a skillet and cook until boiling. Let the juices simmer on low-medium for about five minutes after the boil occurs.

Take off heat and place in 8x8 casserole dish. Use the flour mixture to sprinkle on top of the berries.

Cook for 25 minutes.

I first made this for my church group this summer (2013). I made the cobbler with four types of berries (Marrionberries, Raspberry, Blueberry and Blackberry) and I doubled it. There were raves all around and many people wanted the recipe. This dessert in the summer will not let you down!
