1 gal small and whole cucumbers
1 c salt
1 pint vinegar
1/2 tbsp alum

Syrup Ingredients -
1 pint vinegar
3 lb sugar
1 oz celery seed
1 oz stick cinnamon
1 tbsp whole allspice
jars, lids and rings

** remember to keep spice bag in syrup

Wash cucumbers (cukes) and pack in crock, cover and submerge with brine (1 cup salt/1gal water). Let set 3 days; 4th day drain cukes and soak in clear water for 3 days, changing water every day. On the 6th day, drain and cut cukes in 1/2 inch chunks. Bring 1 gal warm water, 1 pt vinegar, alum and cucumber chunks to a boil, then let stand 1/2 hour, drain.

Make syrup from ingredients above - ** tie spices in white cloth bag. Boil syrup 3 minutes. Pour hot syrup over chunks, cover and let set 1 day. 7th & 8th days, drain off syrup and reheat to boiling and pour back over chunks. 9th day drain and reheat syrup. Pack chunks into hot jars, cover with hot syrup and seal.

This is one of Jake's favorites. It was his great, great Grandmother, Mildred Wolfe's recipe, and we are very honored to share. Today is August 24, 2013 and our Sailor is currently deployed on the USS Bainbridge DDG 96 - we are so very proud of the man he has become. We ask the Good Lord to bless all of our Military, watch over them and bring them home safe.
