1 med. head cabbage
2 stalks celery
1 carrot
1 green or red pepper (small)
2 c. white sugar
1 c. salad oil
1 Tbsp. salt
2 Tbsp. sugar
1 c. cider vinegar (I use 1/2 white)

Directions:
Directions:
Shred cabbage, celery, carrot, and pepper.
Then add 2 cups white sugar and set aside.
Mix and boil together salad oil, vinegar, salt and 2 Tbsp. sugar.
our hot mixture over vegetables. Let stand overnite until real cool. Jar up. Can be used after 1 or 2 days, but will keep nine days to 2 weeks and can also be frozen for later.

I usually make 2 or three heads of cabbage and freeze in quart jars.
(Use shredding disc in Cuisinart if you have available)
