6 oz. large bow-tie pasta
3 TBSP. butter, divided
2 boneless, skinless chicken breast, cut into bite size pieces
4 oz. fresh mushrooms, sliced
1 med. zucchini, thinly sliced
1/2 cup chopped red bell pepper
2 TBSP. dry white wine
Juice and rind of 1 small lemon
3 TBSP. chopped fresh basil
3/4 cup shaved parmesan cheese, divided

Cook pasta according to package directions. Melt 2 TBSP. butter in large skillet over med-high heat. Add chicken and mushrooms; cook until light golden brown, about 5 minutes. Add zucchini and pepper; continue cooking until vegetables are soft, about 3 minutes. Add wine and lemon juice; simmer 1 minute. Remove from heat; stir in lemon rind, basil and remaining 1 TBSP. butter. Toss with the hot pasta and 1/2 cup parmesan cheese. Place on serving platter and sprinkle with remaining 1/4 cup parmesan cheese.
