1 2-3 lb. roasted chicken
2 (12 oz.) packages Reamers frozen egg noodles
1 c. sour cream w/chives
2 c. Colby jack cheese, grated
1 c. sharp cheddar cheese, grated
1 can cream of chicken soup
1 can cream of celery soup
1/4 c. milk or chicken broth
salt & pepper to taste

Preheat oven to 350º. In a 9 X 13 in. pan, combine sour cream, 2 c. Colby jack cheese plus 1/2 c. sharp cheddar cheese, soups and milk. Stir well to mix. Remove skin from chicken and discard. Carefully pull chicken meat off of bones and shredd with fingers. Discard bones. Boil noodles according to package instructions. Drain noodles. Add chicken meat and noodles to the mixture in the 9 X 13 pan and stir well to combine. Add salt and pepper to taste. Spread evenly in pan. Sprinkle remaining cheddar cheese over top of casserole and bake for 30 min.

To cut down on preparation time, purchase a Rotisserie chicken at the grocery store rather than cooking one yourself. Casserole goes well with mashed potatoes and peas.
