1 lb. chicken livers
2 medium sized onions, chopped
1/3 cup butter
2 hard boiled eggs
1 t salt
1/2 t pepper
1 loaf of extra thin white bread (Arnold or Pepperidge Farm)
approximately 1 more stick of butter

Directions:
Directions:
Saute chicken livers in 1/3 cup butter with onions until no pink remains in livers and onions are browned.
Chop livers, onions, and eggs coarsely and evenly. Gently stir in salt & pepper; refrigerate
Serve garnished with additional chopped egg and parsley.

Melba toast: Slice bread in thirds and brush both sides with melted butter. Bake on cookie sheets at 250 degrees for 90 minutes, turning toast over after 45 min. Store in an airtight container.

All the Peltiers loved this! I continue to make it for Meg and me. However, somehow it always disappears, so I know I have some closet 'liver lovers' who just won't admit it. You know who you are. I'm glad to share it with you.
