10 baby Bella mushrooms
10 slices bacon (thick)
1 jalapeņo pepper (small)
1/4 c ricotta cheese
1/2 c low moisture mozzarella cheese
1/4 c feta cheese
1/2 c zesty Italian dressing
Directions:
Directions:
Remove stems from baby Bella mushrooms. Set caps to the side. In a small bowl, combine mozzarella, ricotta & very finely diced jalapeņo. Fill each mushroom cap with cheese & pepper mixture. Then wrap each cheese filled mushroom cap with a thick slice of bacon, and insert a toothpick completely through to secure it all together. Drizzle the Italian dressing over the prepared mushroom caps! Put in refrigerator for 2 hours to marinate. Grill until bacon is thoroughly cooked (about 15-20mins). Sprinkle feta cheese crumbles over the bacon wrapped, cheese filled mushroom caps and serve with a smile!
