Base
2 c all-purpose flour
½ c powdered sugar
1 c of margarine or butter

Filling
4 eggs, slightly beaten
2 c of sugar
1/4 c all-purpose flour
1 tsp of baking powder
¼ c of lemon juice

Frosting (Optional)
1 c of powdered sugar
2 – 3 tbsp of lemon juice

Directions:

Part 1
Heat oven to 350º. In a large bowl, combine all base ingredients and mix at low speed until crumbly.
Press mixture evenly in the bottom of an ungreased 9” x 13” pan.
Bake at 350º for 20 – 30 minutes or until lightly browned.

Part 2
Meanwhile, in a large bowl, combine all filling ingredients except the lemon juice and blend well.
Stir in ¼ cup of lemon juice
Pour mixture over the warm base.

Part 3
Bake at 350º for an additional 25 – 30 minutes or until the top is a light golden brown.
Cool 1 hour or until completely cooled.

Part 4 (Optional)
In a small bowl, combine 1 cup of powdered sugar and enough lemon juice for desired spreading consistency and blend until smooth.
Spread on cooled bars and cut into servings.
