1 envelope dry yeast
1/4 cup sugar
1/4 cup warm water
3 1/2 to 4 cups flour
3/4 tsp salt
2 eggs plus 2 egg yolks
2 tsp grated lemon rind
1/3 cup warm milk
6 tbsp softened butter
1/2 cup raisins

Cheese Filling

8oz cream cheese
1/2 cup cottage cheese
1 egg yolk
1/4 cup sugar
1 tsp grated lemon rind

Crumb topping

1/3 cup chopped nuts
3 tbsp flour
3 tbsp butter softened
3 tbsp sugar
1/4 tsp ground cinnamon

Directions:
Directions:
Sprinkle yeast and1/2 tsp sugar over warm water. Let sit until bubbly.

Combine 2 cups of flour, salt, lemon rind and sugar in bowl. Beat the eggs and yolks to mix. Pour eggs, yeast mixture and milk into flour. Beat well.
Add butter gradually, beating well. Add 1 cup of flour or more and raisins and knead until elastic. Let rise until doubled in size.

For cheese filling beat cream cheese, cottage cheese, egg yolk and sugar and lemon rind together.

Make crumb topping by combining nuts,flour, butter, sugar, and cinnamon.

Line 2 9 inch round pans with parchment paper.

Punch dough down and divide into 4 parts. Press 2 parts into pans and up the sides. Cover each with half of the cheese filling.Top with the rest of the dough. Sprinkle each bread with crumb topping. Let rise about an hour.

Bake at 350 for 40 minutes or until they sound hollow when tapped.
