Granny’s Fig Cake

2 cups figs, chopped
1 cup boiling water
1 cup sugar
1/2 cup cooking oil
1/2 cup butter
2 eggs
1/2 cup applesauce
2 cup flour
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
1 cup chopped nuts, pecans or walnuts

Directions:
Directions:
Preheat oven to 350 degrees F. Grease bundt or tube pan.

Pour boiling water over dried figs and let sit for a bit until figs soften and cool.

Cream together sugar, oil, butter, eggs and applesauce. Sift together flour and baking soda; add to creamed mixture. Add vanilla, cinnamon, figs and chopped nuts.

Pour into prepared bundt pan and bake for 35 to 40 minutes. Remove from oven, let cool a bit. Remove from Bundt pan. Sprinkle with powder sugar, a mixture of sugar and cinnamon or drizzle with glaze, see recipe below. And serve.

Glaze: 2 cups powdered sugar, splash vanilla and 1 ½ Tbsp milk; add milk a little at a time until consistency is good for drizzling.

Variation: add ½ cup cocoa powder and ½ cup brown sugar and ¼ cup buttermilk.
