1/4 c. extra virgin olive oil
4 large cloves garlic, chopped
2 large leeks, white part and 3" of green finely chopped
1 large red (Bermuda) onion, finely chopped
1/2# shitake mushrooms, discard stems, then cut the caps into thin strips
1/2 c. dry vermouth
2-28 oz. cans of San Marzano Italian peeled tomatoes, crushed with your hands.
1-6 oz. can tomato paste
2 c. water
1/2 c. chopped fresh basil leaves
1/4 c. finely chopped Italian flat leaf parsley
Salt and pepper to taste
1# penne pasta (or your favorite pasta), cooked according to package directions.

Heat the oil in large skillet, (about 12" with 3-4" sides) over low heat. Add the garlic, leeks, and the red onion. Cover and cook for 20 minutes, stirring occasionally until the onions and leeks are softened. Add the thinly sliced mushrooms and the vermouth. Add salt and pepper. Stir well to mix. Cover and continue cooking for 5 minutes, stirring occasionally. Add the tomatoes, and the tomato paste, the water, basil and parsley. Stir well to mix. Cover and raise the heat to medium. Bring the sauce to a boil, then reduce the heat to low-medium. Continue cooking, covered, at a low-medium boil for about 1 hour, stirring occasionally, until the sauce is reduced by about 1/3. (a piece of Italian bread is great for tasting) to see if you need to add additional salt and pepper. Add about 2 cups of this sauce to your bowl of pasta. Toss well to coat. Top with an additional 2 cups of sauce. Freeze (or share) the remaining sauce in 2 separate containers. Label and date the containers.

Ask for San Marzano tomatoes (not San Marzano Style) at either an Italian import store or at your supermarket.

Enjoy this delicious sauce within a month. Use it on pasta, over polenta, or on bread for pizzas.
