1 box white cake mix
1 c. cooking oil
1 c. club soda
2 boxes pistachio pudding mix
4 eggs, well beaten
1 tsp. vanilla
1 tsp. almond extract

Frosting
1 envelope whipped topping mix
1 c. cold milk
1 box pistachio pudding mix
1 c. sour cream
OR
1 large tub of Cool Whip
1 box pistachio pudding mix

Directions:
Directions:
Combine cake ingredients and bake at 350 for 45-55 minutes. Cool and refrigerate before frosting. Combine frosting mix and beat well. If using Cool Whip, mix the night before so pudding crystals dissolve. Frost cake. Keep cake refrigerated.

Variation: You can use any flavor of pudding. Chocolate fudge in the cake and cheesecake in the frosting. When it's available, the pumpkin one is tasty.
