Large disposable foil pan
1 boneless pork loin, 3 to 4 lbs

Brine
4 c. Dr. Pepper
1/2 c. kosher salt

Glaze
1 jar (9 oz) tart cherry preserves
1/2 c. Dr. Pepper
1/2 c. water
1-2 T. minced chipotle in adobo sauce
4 tsp. Dijon mustard

Directions:
Pour soda in a large disposable bag and add salt (it will foam up). Trim excess fat and silver skin from pork loin. Place loin in the brine and refrigerate for 1 to 2 hours. Mix glaze ingredients in foil pan. Remove loin from brine and pat dry. Lightly coat with oil and let stand at room temperature for 20 to 30 minutes. Prepare grill. Sear loin over direct heat until the surface is well marked but not burned, 8 to 12 minutes. Spread charcoal in a ring for indirect cooking.(you want the fire to be 450 to 550). Put loin in foil pan and coat with glaze. Grill, with lid closed, until you reach internal temperature of 145-150, 25 to 30 minutes, turning in the glaze every 10 minutes. If glaze gets too thick add more soda or water. When done let loin rest for 5 minutes before cutting. You can do this recipe in your home oven as well - pan sear loin and bake 350-375 until reaching internal temperature of 145-150.
