Crust:
1 c flour
2 T sugar
Pinch of salt
1/2 c butter or margarine

Filling:
2 1/4 c rhubarb
1 1/4 c sugar
1/3 cup half and half or cream
2 T flour
3 egg yolks

Topping:
3 egg white
6 T sugar
1/4 t cream of tartar

Directions:
Directions:
For crust: Combine flour, sugar, salt and butter or margarine. Press in
8x10 inch pan. Bake 325 degrees for 20-25 minutes,
For Filling: cook until thick the rhubarb, sugar, half and half or milk, flour and egg yolks. Pour over bottom crust.
For Topping: Beat egg whites, sugar and cream of tartar. Spread on top of cooked rhubarb mixture.
Brown in 325 degrees oven for 10-15 minutes
