1 pound ground beef or sausage
1 medium green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
1 10-oz. can diced tomatoes with green chilis (I suggest Red Pack)
1 8-oz. can tomato sauce
1/2 cup uncooked long grain rice
1 tsp. salt
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 to 1/2 tsp. EACH - white, black, and cayenne pepper
4 to 6 drops hot sauce
1 small head cabbage
1 cup (4 oz.) shredded Colby cheese

In a skillet, cook beef, green pepper, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes, sauce, rice, and seasonings.

Spread into an ungreased 13 x 9 x 2 inch baking dish. Top with the cabbage and cheese. Cover and bake at 350º for 65-75 minutes or until the rice is tender.

I prefer to use Italian sausage in this recipe, and the smaller amounts of pepper (for kid friendliness). I have used the full amount of pepper, hot sauce, and hot Italian sausage - it gets VERY spicy, but it's delicious!

This is a favorite in my house - does not last long at all.
