1 large can Evaporated milk
1 1/2 cups pineapple juice
2 eggs
1 cup sugar
1 small package Strawberry jello
1 box of vanilla wafers

Directions:
Directions:
On stove top combine in a medium sauce pan, pineapple juice, eggs and sugar and bring to a boil, remove from heat and add jello. Mix well and allow to cool to room temprature.
Place can of evaporated milk into a glass bowl and place in freezer until icy. Once ice crystals have formed take out of freezer and beat on high with an electric hand mixer until it's as think as whipped cream, slowly add jello mixture and mix well. Pour into a vanilla wafer crust, refridgerate over night.
