40 cherries, pitted & halved, fresh is best
small amount cornstarch for coating cherries (1-2 tablespoons)
1 cup pancake mix
1 cup buttermilk
1 egg
2 tablespoons melted butter
1 tablespoon melted lard
7 tablespoons sugar
1/2 teaspoon black pepper
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Topping:
toasted almonds
powdered sugar for dusting

Preheat the oven to 350°F.
Grease 10 inch cast iron skillet.
Toss cherries in small amount of corn starch to prevent a soggy dessert.
Place the cherries in an even layer all over the bottom of the skillet.
Whisk together the other ingredients, and pour over the cherries.
Allow to rest for 20 minutes.
Bake for 45 to 50 minutes, until a skewer comes out clean and hot.
Allow the clafoutis to cool til just warm. Cut into 8 slices with a serrated knife.
Garnish with powdered sugar and toasted sliced almonds.

Best with fresh cherries. May use frozen, but you will need to thaw, drain juices and add another 1/4 cup pancake mix to prevent a soggy dessert.
