2 cups grated carrots
2 cups flour
1 1/4 tsp baking soda
1 tbsp cinnamon
1/2 cup chopped nuts
1 1/4 cup vegetable oil
1 tsp baking powder
1 tsp salt
1 small can crushed pineapple
4 eggs
2 cups sugar
1/2 cup raisins (VERY optional)

Directions:
Directions:
Preheat oven to 350ºF.

Cream together sugar and oil, add eggs. Add flour, baking soda, baking powder, salt, and cinnamon, mix until incorporated. Add carrots, pineapple, nuts and raisins and fold together.

Bake in a 13x9x2 greased and floured pan for 45 minutes. Cool.
