1 package spice cake mix
1 can (15 oz) pure pumpkin (NOT pumpkin pie mix)
3 large eggs
1/3 cup vegetable oil
1/3 cup water

Directions:
Preheat oven to 350ºF. Paper line or grease 24 muffin cups. Blend cake mix, pumpkin, eggs, oil and water in a large mixer bowl until moistened. Beat on medium speed for two minutes. Scoop batter into muffin tins filling cups 2/3-3/4 full. Bake for 18-23 minutes or until wooden toothpick inserted in the center comes out clean. Cool in pans for 5 minutes then move to wire racks and cool completely.
