Vanilla Ice Cream (1.75-2 quarts ice cream)
2 cups sweetened coconut flakes
2 cups corn flakes
4 cups rice krispies
1 cup brown sugar
1/2 cup melted butter

Directions:
Directions:
Scoop ice cream into balls and place on cookie sheet in freezer for at least one hour. In the meantime preheat your oven to 450º, mix together all ingredients except butter, then add melted butter and mix again, then toast in oven for 5-10 minutes stirring every few minutes and watching to make sure it doesn't brown to quickly. Let mixture cool. Remove ice cream balls from freezer and roll in cereal mixture, press mixture into the ice cream to make sure they are covered. Place back into freezer until ready to serve. These can be made a day or two in advance, if you are going to do that just make sure that you put them in a ziplock bag after you have added the cereal and refrozen them hard. Can also be done without toasting cereal mixture just skip the toasting step.

Serve with honey, hot fudge, caramel, and/or whipped cream.
