1 10 oz. pkg. frozen chopped spinach, thawed & drained
1 8 oz. pkg. cream cheese, softened
1/2 c. chopped scallions
1/2 tsp. garlic pepper
1 c. shredded Cheddar cheese
1/3 c. rehydrated, chopped sun-dried tomatoes or chopped & drained
water chestnuts
crackers & or cut-up assorted fresh vegetables for serving adding a few
shakes of Tabasco sauce

In a one quart mini electric slow cooker, mix together spinach & cream cheese. Stir in the scallions & garlic pepper. Cover, plug in the cooker & cook for 2 hours, stirring once or twice until very hot. Reserve 2 tbsp. cheese for the top. Stir in remaining cheese & sun-dried tomatoes. Sprinkle the reserved cheese on top. Pass crackers & or veggies for dipping.
