8 egg whites
160 g. sugar
500 g. milk
8 sheets of gelatin
4 bananas
500 g. creme fraiche

120 g. water
100 g. sugar
2 bananas
juice of one lemon

Directions:
Directions:
Put gelatin in cold water. Beat egg yolks and sugar until smooth and light. Add to cold milk. Put on heat but do not bring to boil Add gelatin leaf by leaf. Puree bananas till very smooth and add to mixture. Mix well. Whip cream (add 2 Tbsp milk before whipping). Add to banana mixture and fold in gently with a spatula. Rine mold in cold water. Pour in mixture and put in refrigerator for about 3 hours. Slice last two bananas carefully. Pour lemon juice over them. Put sugar and water on stove. As soon as sugar is dissolved add bananas and lemon juice. Lift bananas out of syrup. Unmold souffle. Pour syrup over and put sliced bananas on top.
