1 pint vanilla ice cream
2-3 T chopped crystallized ginger
1 c canned pumpkin
1 c sugar
1 t pumpkin pie spice
1/2 t ground ginger
1/2 t salt
1/2 c pecans, chopped
1 c heavy whipping cream, chilled
Graham cracker crust or pie crust, baked & cooled

Directions:
Directions:
Soften ice cream slightly and quickly fold in crystalized ginger. Spread in pie shell. Freeze solid. Mix pumpkin, sugar, spices and nuts. In separate chilled bowl beat whipping cream till stiff peaks. Fold into pumpkin. Pour over ice cream. Freeze. Remove from freezer 10 min. before serving.
