3 cups powdered sugar
2/3 cup unsweetened cocoa powder
1/4 teaspoon salt
3 egg whites (make a double batch and use the yolks for Crème de Vie)
1 teaspoon vanilla extract
1 cup mini chocolate chips (regular sized chips tend to fall out of the batter as the cookies bake. However, you could substitute mint chips, butterscotch, etc. here for a different flavor).

1. Mix powdered sugar, cocoa powder, and salt in a bowl. Add the egg whites and mix. Add the vanilla extract and the mini chocolate chips.

2. Refrigerate the batter at least 20 minutes. I use this time to preheat the oven to 350º.

3. Spoon the batter onto a parchment-paper-lined cookie sheet and bake for 12-14 minutes at 350º. The cookies are done when the tops are glossy and beginning to crack.
