4 squash, peeled and sliced into rings
1 bell pepper
1 onion
1/2 c. corn meal
1 c. self-rising flour
salt and pepper to taste
1 egg
1/2 c. milk

Directions:
Directions:
Put sliced squash, diced onion and bell pepper in pot; add water and boil until tender. Mash squash, bell pepper and onions. Add corn meal, milk, egg and flour. Make a stiff batter; add more flour if needed.
Heat a skillet of oil until very hot. Drop batter by spoon into hot oil. Squash should form balls, similar to hushpuppies. Fry until golden brown and done in middle.
