5 lb cheap hamburger
5 rounded tsp complete cure with sugar
2 1/2 tsp mustard see or 2 tsp ground mustard
2 1/2 Tbsp course pepper
2 1/2 tsp garlic salt
3 tsp hot taco sauce
3 tsp liquid smoke

1.Mix well, cover and refrigerate overnight.
2.Mix again the next day and refrigerate overnight.
3.Third day form into 5-6 rolls
4.Put in 140º oven for 10 hours. Turn every 2 hours.
5.Remove and roll in paper towel to remove fat.
6. put in smoker with hickory chips for 4 hours.--I never did that as I didn't have a smoker!
7. Roll in tin foil. Puncture foil at interval to let fat drain out.
8. Bake at 325º for 1 hour.
