Sourdough Cinnamon Rolls Recipe

6 c bread flour
½ c sugar
1 tbsp. salt
½ c cooking oil
2 c sourdough starter
Warm water
Brown Sugar
Cinnamon

Directions:
To make bread dough, add first 3 ingredients to large bowl and mix thoroughly with a large spoon. Add cooking oil and starter and mix thoroughly. Add enough warm water to make the mixture moist but not wet. Mix well with spoon.

In another large bowl, coat the inside with cooking oil and transfer the bread dough. Pat down to where there is a flat top on mixture. Coat paper towel with cooking oil and dab on top of bread mixture to coat well. It does not need to be wet, just moist. Cover tightly with aluminum foil and let rise for 4-8 hours depending on the temperature of the house.

Sprinkle bread flour on countertop and pour out bread dough. Knead for approximately 3 minutes while mixing in more bread flour. The dough needs to be dry enough so that your hands do not stick to it. Roll out into large rectangle on the countertop with a rolling pin. Sprinkle a layer of brown sugar and cinnamon on the top of the rectangle. Starting at one edge, roll the mixture until it is all rolled up into a cylinder. Slice the roll crossways with a sharp knife and place the slices touching each other into greased aluminum pie pans. Coat the paper towel again with cooking oil and dab on top of the rolls to coat well. Let rise in cold oven for another 4 to 8 hours. Turn on oven and bake at 350º until brown normally 30 minutes.

The rolls can be covered with a thin icing made of confectioners sugar and milk. Just put the sugar in a bowl and add milk by the spoonful until it is a thick creamy consistency. Eat hot.
